Food: Kale - Strawberry Salad
Recipe from Two Peas and Their Pod 

Kale, Strawberry & Avocado Salad with Lemon Poppy Seed Dressing

 Yield: Serves 4
Prep Time: 10 minutes
Total Time: 10 minutes

Kale salad with strawberries, avocado, almonds, feta, and a light lemon poppy seed dressing.

Ingredients:

For the salad:
4 cups chopped kale, stems removed
Pinch of sea salt
1 cup sliced strawberries
1 avocado, chopped
1/3 cup sliced almonds
1/4 cup feta cheese
For the Lemon Poppy Seed Dressing:
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon honey
1/2 teaspoon poppy seeds
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper

Directions:

1. Put the kale in a large bowl. Sprinkle a pinch of sea salt over the kale and massage the leaves with your hands until the leaves are darker in color and tender.
2. Add the strawberries, avocado, almonds, and feta cheese. Toss gently.
3. In a small jar, combine the olive oil, lemon juice, honey, poppy seeds, salt, and pepper. Shake until mixed well.
4. Pour the dressing over the salad and toss to coat. Serve.
Note-Trader Joe's sells kale in bags-already chopped. It's the best!

She paused, seeming to consider his words. He scrambled, not about to lose traction now that he’d gotten his foot in the door. “Christ sakes. Gillian, come out with me on a date. Anywhere you’d like. You name it. How about a fancy restaurant in Clarkesville as our first date? French cuisine and candles. I imagine that’s what a girl like you’d prefer.”
“Oh, really. A girl like me.” She side-glanced him and he knew he had her. “I don’t know about that…as a first date?”
“Then tell me. What would you like to do? What are you doing anyway, this weekend? One date, and you can give me pointers for the future.” He squeezed her fingertips, shaking her arms.
          “There’s the county fair. I’ve been meaning to go. Some of my students are performing.”
He’d not been to a fair since he was a kid. But he’d walk across hot coals or balance on a tightrope if it meant she’d agree to a date. “You’re on. When would you like to go?”
“How about this Friday evening? Say, after dark.”
“I don’t have anything to write your telephone number down.”
“Jeez, Stephen. How long has it been since you’ve dated?” She shook her head, giving his arm a squeeze. “Give me your phone and I’ll infrared my info into your contact list.”
He reached into his pocket, taking out his phone and placing it into her waiting palm.
        “A while. But you agreed, so no backing out.”
“Don’t worry. I’m not backing out. We’ve already discussed that neither you nor I fit the mold of normal dating people. I’ll check my expectations at the door, if you do the same.”
He stuck out his hand, eager to close this deal. “Agreed.”

Our culture is all about achievement. Meeting up with family, friends, co-workers and we're asked what's shaking. On the receiving end, I'm always scrambling to summarize my life events including spouse's, children's, heck even are pets are discussed as achievement oriented. We've all been there.

Yet in all this hullabaloo, when have we been asked what are we dreaming? Or the contents of our last fantasy? How about the status of our daydreams? Zilch.

Sure, in order to succeed we must stay the stay, realize it's the longevity of the race, and even during the darkest hour, we must continue as though the light were blazing. Faith, persistence, and loyalty to the cause are what make a champion.

In all this glory, we must remember that in order to have a goal, we must have a vision. And where does this imagery come from?
